I would highlight Tom and Dick Lewis at Monachyle Mhor, and the work that they have been doing in Callander High Street with Mhor Fish and their bread shop. They are getting back to traditional ways of cooking with fresh, to-order, seasonal produce that is supplied from their own land, and they have good bespoke training programmes for their young people.
